Modern copper pans—including ours—tend to be lined with stainless steel, which makes for a more durable pan than the more traditional (but much higher-maintenance) tin-lined copper pans.

Cast iron is usually what you think of when you mention the word “skillet.'' Cast iron is heavy, and it can be hard to maneuver in the kitchen. However, many people love cast iron because it can retain heat. Newer pans will need to be seasoned with a light coating of oil. After the pan is seasoned, cast iron has excellent non-stick abilities. 

But you'll want to factor in that this material is a lot heavier than stainless steel and can be harder to maneuver and lift. There are certain sauces or foods that aren't recommended to be prepared in a cast-iron skillet. If you're simmering a tomato sauce or other acidic foods, or foods that are more likely to stick, such as eggs or crepes, opt for a skillet that isn't cast iron.
