You cannot use metal utensils on aluminum pans. Since aluminum is a soft metal, using metal utensils on an uncoated aluminum surface can damage its surface. You can use metal utensils, except for sharp kitchen knives, on hard-anodized aluminum pans. The anodization process adds a thick layer to the aluminum, which increases its durability and scratch resistance.

In the range of cookware, skillets and pans are two of the most commonly interchanged. They are fairly similar in shape, available in almost the same sizes, and are often chunked into the same product category. 

Ceramic pans are similar to non stick pans, but with one crucial difference. Because part of the coating releases every time it heats up (that’s the “self-sacrificing” bit), ceramic pans become less non stick with every use, making for a pan with a shorter lifespan. On the plus side, ceramic pans’ aluminum core makes them relatively lightweight and easy to handle.

Carbon-steel pans are thinner and lighter than cast iron pans. They heat up quickly but lose heat just as fast. Like cast iron pans, they can also be seasoned to make them non-stick. They distribute heat evenly and are oven safe. Their main disadvantage is that they're prone to rust easily if not cared for properly.
