While the smoked variant is the responsible ingredient for the smoky flavor in many recipes, sweet paprika gives your dishes a fruity, sweet and slightly bitter flavor with very little to no heat at all. If you happen to spot the usual bottle that just says paprika, that’s most likely the regular or sweet variant.

Bell peppers definitely have a less spicy flavor and heat level than the peppers used to make hot paprika. But I have tried bell pepper powder in many of my recipes, and it worked just fine.

Using a dehydrator is a fantastic way to dry peppers. It gives you control over the temperature and airflow, making sure the peppers dry perfectly. Just set the dehydrator to around 130°F (54°C) for thorough drying while keeping the peppers’ flavor and color intact.
