This spice has been thoroughly incorporated into Hungarian culture. There are eight paprika flavor and appearance profiles in Hungary; they range from különleges, sweet and mild, and a brilliant red, to erős, which is spicy and a dusky orange-brown color that can be as hot as the hottest jalapeno. Paprika marketed in the US as Hungarian Sweet Paprika is usually classified as édesnemes paprika; fiery red, but with a mellow flavor and just a touch of pungency.  

If you’re looking for paprika, you won’t have to search far. You’ll find the popular spice in your local supermarket, just look out for the label. If it just says paprika, that means it’s most likely the sweet variety. So if you’re after smoked, make sure it says it on the packaging label. You’ll also find smoked paprika as powder to use in your marinades and rubs. Speciality food stores and spice shops, as well as online, are a good place to get your hands on authentic Hungarian and Spanish paprika.

If you can’t find fresh red chillies, just use the good old dried red chillies. Soak the dried chillies in warm water to rehydrate them and then grind them up. When your sauce is ready, you should see tiny pieces of chilli and minced garlic floating around. These little bits are the life of the sauce.
